Blossoms are in full effect in New York, but probably my most favorite part of spring is when the ramps come up. Ramps are a wild spring onion, and we have many patches of them at our place in Sullivan County. This was our first weekend of ramps, so they are small and delicate right now--perfect in an omelette, or on top of a pizza. In the next couple of weeks they will get bigger, and will be perfect for pickling. Besides eating them, my favorite thing is digging them up. Ramp digging and building stacks of wood are my idea of heaven.
